This is another item I've been ordering from Tony for years. These salmon fillets cannot be beat! You can just take 'em out of the freezer and immerse them in a pan of lukewarm water, still in the plastic, and voila they are thawed out within 10 minutes or so.
Then I sautee in a pan with butter, with lemon pepper and paprika on both sides, and a little salt. Sometimes I'll slather some Dijon mustard on them and sprinkle bread crumbs on top, then cook.
I like to sear them first at high temperature, then turn down the heat for the final inner cook. Don't overdo it, and you'll have it crispy on the outside and super-tender on the inside.
