Certified Berkshire All Natural Pork Spinalis you say. Some call it a Pork Cap, or Pork Crown. Well whatever you call it, it is about the best cut of pork that you have ever had, and its Berkshire Red Pork. Wow!

This particular cut comes from the outside of the pork loin. Similar to our hard to get Rib Eye Spinalis that we are known for. It is absolutely delicious, and so easy to cook. No need to marinate, just add your favorite spices, and cook on a hot grill (550-600 degrees) for 2 minutes per side. Make sure to move so the pork spinalis does not burn, then turn grill to low and cook for an additional 3-4 minutes per side. Using a meat thermometer, remove from grill at 140 degrees and let rest for a few minutes. Temperature should be around 150 degrees when you are ready to eat.
