What is a Drop Cut you ask? We have been selling them for the past few years at our farmers market, and now we are proud to offer them on our website. The drop cut is the rib eye that is left from between the bones when they are cutting the giant tomahawk rib eyes. They are somewhat thin and a little fatty, but but they are a fabulous steak. They are seriously marbled, and the tenderness is second to none. Then to even add to the flavor, they are dry aged. They just take a few minutes on a hot grill, with just a little of your favorite seasoning. Serious steak for a less than serious price. Don't let them fool you with a thin rib eye, the drop cuts are a hard one to get.
