The absolute best part of the rib eye. If you have never tried a Spinalis - Cap Steak, then you are in for a treat! They are extremely marbled, similar to a flank or tri-tip. However, these steaks do not need to be marinated. When grilled correctly, they are as tender as a filet mignon, but with all of the flavor of a rib eye. These steaks are very hard to find, and we are proud to offer them to our customers.

  • Individual size: 8oz.  Individually vacuum packed and quick frozen.  Shelf Life: 6 months.  Easily quick thaws in package in cold water or overnight in refrigerator.

  • Grilling Directions:
    There are many ways to cook these steaks, however there are a few things that you must do to ensure perfection. First, always bring the steak to room temperature before cooking. This can be done by setting the steaks on a plate on the counter uncovered for about 20-30 minutes. This allows the steak to coagulate, which basically means to allow the blood to spread out into the steak, which in turn will result in a much juicier steak. You can also add your favorite spices at this time. Another critical element to the process, is to allow the steak to rest for at least 5-10 minutes before serving. Again, this allows the steak to coagulate, and will result in a much juicier steak. This steak is definitely best eaten medium rare. Due to its consistency, rare seems to be tougher and more chewy. I know, I know, most grillers think that this is a sin of grilling, however we find that this is the best way. Give it a try and let us know how you like the Spinalis prepared.

  • I have many discussions with my clients on the best way, time, and temperature, to cook this steak on the grill. The best way that we have found is to place the steak on a preheated grill at 550 degrees for 3 1/2 to 4 minutes per side. The Spinalis will actually get bigger as you cook them. This cooking time and temperature results in a perfectly cooked medium rare steak. I had never heard of this steak until I saw it on the menu at Gordan Ramsey's Steak Restaurant in Las Vegas. It was the most tasty and tender steak I had ever eaten. So when I saw them on the TK website I thought I would try them and I am glad I did. Best steak I have ever cooked it was tender and tasty just like it was in the restaurant. I could not ask for anything better.

I have ordered these steaks from TK multiple times. They are hands down the most flavorful, tender and consistant cuts of beef i have ever prepared. If you want to surprise a steak-lover, this is the way to do it!

These ribeye caps steaks are fantastic and very hard to find! I like the fact that TK now offers them as individual steaks as opposed to the entire cap- much better to thaw just what you need. These steaks are bursting with flavor and will draw compliments from whomever is lucky enough to be treated to one.

I emailed Tony last minute hoping to get an order out in time for Father's Day. I wasn't expecting much.. but Tony emailed right back and was able to accommodate.

It was tough finding a good source for the spinalis. Now that I've got one, and what Tony was able to do for me by getting the order out.. I know where I'm going for my next order.
