Without a doubt the best steak I have ever cooked. It is tender like a filet with the taste of a ribeye. All I did was lightly season with garlic salt and pepper and grill till medium rare. Absolutely delicious. These will be part of the order every time.

I have to admit that this is not the prettiest cut of meat I've ever seen, but what it lacks in looks it more than makes up for in taste. A real Penn Stater. I cooked them on my Big Green Egg at 600 degrees for approximately 3 minutes per side with nothing but a little Lea and Perrin's and Montreal Steak seasoning. OMG! Everyone raved about them and wanted to know where I got them. The marbling on these things adds to the colossal flavor. They even fatten up as they cook. Whatever you call it, it's definitely the best steak I've ever had. Keep 'em coming!
