Royal Reds (Pleoticus Robustus) are perhaps the sweetest, softest texture, and most delicate of all our native shrimp species. These vibrant red shrimp never see the light of day, preferring the cold dark depths out at the edge, where the gently sloping bottom of the Gulf drops abruptly off the continental shelf. Depths from 1,200 feet to over a half mile down are the home to this sweetest of all shrimp. Steamed, grilled, or sautéed these sweet shrimp are delicious. Due to their more delicate texture, cook times for these shrimp must be cut almost in half. Normally they are only available through late spring, and range from the Desoto Canyon off of Pensacola all the way along the shelf's edge to the Dry Tortugas in the Florida Keys. Individually Quick Frozen. Shelf Life: 6 months. We suggest to cook these shrimp from frozen, but can be easily quick thawed in in cold water, or can be thawed overnight in refrigerator.
Shrimp
with Orange Barbecue Sauce
Ingredients
1 1/2 pounds wild Florida Royal Red shrimp,
peeled and deveined
1/2 teaspoon salt
1/4 teaspoon pepper
1/2 cup Florida orange juice
1/2 cup catsup
2 tablespoons Florida
lime juice
1 tablespoon instant minced onion
1 tablespoon soy sauce
cheese grits (optional)
Preparation
Thread shrimp on 10-inch skewers. Sprinkle with salt and pepper. Set aside. In
a small saucepan, combine orange juice, catsup, lime juice, onion, and soy
sauce; heat until bubbly. Brush shrimp with sauce and grill 6 to 8 inches over
medium coals for 3 to 4 minutes. Turn, baste and cook an additional 3 to 4
minutes. Serve with cheese grits, if desired.

Cooking Directions & Ingredients
Royal Red Shrimp - Wild Caught - Chemical Free - All Natural These shrimp cook very fast, usually half the cooking time of regular shrimp. If overcooked they become too soft. Do not over cook. Boil - If desired, add salt, celery, bay leaf or other seasonings to water before boiling. Place frozen shrimp into boiling water and simmer for approximately 1 1/2 - 2 1/2 Minutes. If serving chilled, immediately submerge shrimp into a bowl of ice for 2 minutes to stop the cooking process. Drain for 2 minutes before serving. Saute - heat butter or oil in a skillet. Add thawed shrimp, desired seasonings, garlic, herbs and/or vegetables, then saute for approximately 1 - 2 1/2 minutes. If using lemon juice, wine or sauce, add during the last minute of cooking. Grill/BBQ - Season or marinate thawed shrimp as desired. Then place shrimp on a hot grill for approximately 2 -3 1/2 minutes. Turn shrimp over halfway through cooking time.
