The folks up in Maine are known for their thick and rich bisque. This one is no exception! A perfect blend of minced sweet lobster meat simmered in rich cream and sherry--there’s nothing better! This bisque/sauce offers many wonderful applications: Works great as a pasta sauce garnished with fresh Parmesan cheese; or as a sauce over stuffed seafood. And, for a grande presentation, use as an underliner for other center-of-the-plate seafood.
