- Wagyu is a delicate meat that requires precise cooking. Using the same quick-sear techniques reserved for rare tuna and foe gras. A quick sear of thin-cut meat in a very hot flame invites perfection. If you have a thick steak, you want it seared on the outside, pink on the inside. Use an intensely preheated cast iron pan or grill to achieve this effect, but don’t allow the steak to remain in contact with heat for long. Allow the fat to melt out of the meat’s internal structure, and your steak will not have optimum taste or tenderness. Wagyu is fragile under heat. Treat it delicately and it will reward you with a sweet, savory taste and velvety perfection.
